  2. Cook the guanciale. Place the guanciale in a cold skillet, then turn the heat to medium. Cook slowly until the fat has rendered and the guanciale is golden and crisp around the edges. Remove the skillet from the heat.

  3. Cook the pasta. Bring a large pot of water to a boil and salt it lightly. Cook the pasta until just shy of your preferred level of tenderness.

  4. Reserve the pasta water. Before draining, reserve at least 1 cup of the starchy pasta water.

  5. Combine the pasta and guanciale. Add the drained pasta to the skillet with the rendered guanciale fat. Toss until the pasta is evenly coated.

  6. Cool the pan slightly. Remove the skillet from direct heat and allow it to cool briefly. This helps reduce the risk of scrambling the eggs.

  8. Adjust the consistency. Add more pasta water, a little at a time, if the sauce becomes too thick. Continue tossing until the sauce coats the pasta.
